Smores Cupcakes!

Hello! I'm back with another baked good :) This one is a smores cupcake recipe I found on pinterest from Glorioustreats.com and I had such a fun time making them! Although they look ouey-gooey and delicious (and they are!) I'm going to tell you my experience making them including the things that went wrong. I messed up one step in the smores icing, and that's why it's so runny - but more on that later! I'm also putting the finishing touches on a Youtube video for this recipe. So i'll link that below :)

I would recommend halfing the recipe because it does make quite a lot, about 2 dozen. So adjust the recipe accordingly!

-2 cups sugar -1 3/4 cups all purpose flour -3/4 cup unsweetened cocoa (best quality available) -1 1/2 teaspoons baking powder -1 1/2 teaspoons baking soda -1 teaspoon salt -3 eggs -1 cup whole milk (I used 2%, use what you have!) -1/2 cup vegetable oil (I think I used Mazola corn oil, again use what you have) -2 teaspoons vanilla extract -3/4 cup boiling water

I threw all the dry ingredients into my Kitchen Aid; sugar, flour, cocoa, baking powder, baking soda and salt. I mixed that together then added the eggs, milk, oil and vanilla extract. Then I boiled 3/4 cup of water and added that. So usually when I make cupcakes I use an ice cream scooper to avoid mess and make sure that each cupcake has the same amount. The instructions on the site suggested something with a spout - so I used a measuring cup. Since the mixture is so liquidy and I used a large measuring cup (it's supposed to be this way), it got everywhere - so I would just be cautious of that next time. Anyways, they turned out great :)

-2 (large) egg whites

-1 cup sugar

-6 Tablespoons water

-1 Tablespoon light corn syrup (check below for tips if you do not have any)

-1/2 teaspoon cream of tartar

-1/4 teaspoon salt

-1 cup miniature marshmallows

-1 teaspoon vanilla extract

So I left those to cool and moved onto the icing. This is when things got hectic... There was so much going on with my mom cooking dinner, I was trying to help her while reading the recipe, but I wont blame her for this one haha! So what I did (do not do this i'm just explaining what went wrong) I threw everything into my mixer and then brought it to the double broiler. I wondered why it wasn't thickening and the marshmellows wouldn't melt. After maybe 10-12 minutes it finally all melted, then I realized what I did wrong. I added more marshmellows to salvage it in the Kitchen Aid - it turned out runny but still delicious!

What I should've done was mix everything except for the marshmellows and vanilla. Bring that to the double broiler and when the sugar has melted then added the marshmallows, mix, then add the vanilla. Hopefully they end up thicker the next time I try this! Regardless of my mistake, the icing looks nice and smooth and still tasted great.

Tip for the corn starch: If you do not have cornstarch, you can use 1 cup of sugar and 1/4 of water!

Finally, it's time for presentation. I took my creme brulee torch and burned the top of the cupcake so it gets that roasted marshmellow effect, then I added either graham cracker crumbs or just a stick of graham cracker in the top and voila!
