Valentine's Day Cheesecake!

I found a recipe on Pinterest while searching for something to bake for Valentine's Day!
I've tried this recipe twice, I'll post a photo here of the two attempts. Then I'll describe my experience making it! Full Credit goes to Cooking Classy.com!


Attempt #1 (Left) is with Raspberry sauce and Attempt #2 is with Cherry Sauce. I'll explain at the end what went wrong with the first one.
Ingredients: (i split them up so you know what goes it each part. Full Instructions on original links)
1 store-bought pre-made oreo crust (save the lid) - graham cracker crust works too
1 Tbsp granulated sugar
1 1/2 tsp cornstarch
1/3 cup cold water
1 1/2 cups fresh or frozen raspberries
12 oz. cream cheese (1 1/2 pkg.), softened
1/3 cup granulated sugar
1 egg
1 egg white
1 tsp vanilla extract
1 1/2 tsp lemon juice
6 oz. white chocolate, chopped or 1 cup white chocolate chips
1/4 cup heavy whipping cream
To start off, I just wanted to say that I hope sharing my experience is helpful. I like knowing and experimenting on what can go wrong. Although the original instructions are extremely helpful, I still messed it up - so here are some tips and tricks to be aware of :)


I started with the Cherry sauce for my second attempt. I threw in the cold water, cornstarch and sugar, and then put in canned cherry pie sauce - but the recipe calls for frozen or fresh. It worked fine :). I just wanted to point out that I put in the wrong amount of water, my measuring cups are coloured coated but I accidentally picked up the 1/4 cup instead of 1/3 cup. This is the set I have here. Anyways, once that came to a bowl and remained at a boil for 5 minutes - I then put it throw a strainer and tried to get as much as I could through, to get rid of any seeds or lumps and set aside. Then I moved over to my Kitchen Aid and mixed the sugar and creme cheese for a minute or two. Once that was ready, it's time to put in the egg and egg white, then vanilla and lemon juice. I used bottled lemon juice, despite my mother telling me to use a fresh lemon, it still tasted nice and subtle anyways.


Not sure if you can tell but this mixture (right) is creamier than the similar one above it (left). That's because I added melted chocolate and heavy whipped cream mixture to it. To get this, I used a double boiler to melt white chocolate chips and some whipped cream, then added it to the cream cheese mixture. Once that was done, I poured about a 1/3 cup at a time to the crust mixture. I just have a regular pre-made graham cracker crust here, but the recipe calls for an oreo one. I just wanted to put enough of the mixture in to cover the bottom of it.


Next, I poured a bit of the Raspberry or Cherry Sauce (this photo is cherry sauce, use whichever you prefer) and I swirled it around with a skewer until the colour went from a deep red to a lighter red, that's when I knew it was mixed in with the creme cheese. Then I poured the rest of the cream cheese mixture over it, making sure all the cherry sauce is covered. Be careful shaking the crust container to even spread the filling - as you can see mine cracked.

Finally, on to the fun part - the dotting. With the remainder of the cherry sauce, I put it in my piping kit and started from the center outwards. With my first attempt, I began with the outer edges and moved inwards and when it was time to connect them - I had lost my place and it clearly looks like I messed up. The original recipe suggest using a syringe, I may try that next time but for now piping works fine. I think I may have dotted too heavily, because the heart did end up quite thick. Regardless, once I was done the dots, I pulled a skewer through each dot from in the center out, making them look like hearts. Then I baked it on 275 farenheit for about an hour in my convection oven!

My family honestly loved this and both were gone within days! I'm going to keep working at it because I really wanted to perfect the hearts! It is such a gorgeous cake and perfect for this winter season :)
